Cashew and Coconut Slice
Crunchy, golden goodness! This slice is super easy and delicious, and the cashews can easily be substituted for peanuts or almonds if you preferred.
BASE
150g butter
2 tbsp golden syrup
1 cup flour
1 tsp baking powder
1 cup desiccated coconut
½ cup sugar
1 cup cornflakes
½ cup chopped roasted cashew nuts
ICING
180g butter
3 tbsp golden syrup
3 cups icing sugar, sifted
METHOD
1. Preheat oven to 180°C. Grease a 20cm x 30cm slice tin. Set aside.
2. Melt butter and golden syrup in a saucepan. In a separate bowl, sift flour and baking powder, then add coconut, sugar, cornflakes, and cashews. Mix to combine. Add liquid to dry mixture and press into slice tin.
3. Bake in preheated oven for 15-20 minutes.
4. To make the icing, melt butter and golden syrup together in a saucepan and add sifted icing sugar, Mix well. Pour over hot base and allow to cool. Cut into squares or rectangles of desired size.
