Energy Slice | Filled with goodness!
Nutty, seedy slices may seem like the 'boring or healthy' option but are so underrated! This energy slice is filled with nuts, seeds, and dried fruit and is nothing short of delicious!
Ingredients
1 cup pumpkin seeds
1 cup sesame seeds
1 cup coconut
¾ cup chopped Brazil nuts (or pecans or hazelnuts)
250g packet gingernut biscuits
½ cup chopped apricots
¼ cup chopped crystallised ginger
125g butter
½ cup sweetened condensed milk
Method
1. Place pumpkin and sesame seeds, coconut and Brazil nuts in frypan. Stir constantly over a low-medium heat for 6-8 minutes, until the seeds start to pop and coconut turns light golden. Remove from heat and transfer to a mixing bowl.
2.Crush gingernut biscuits (need some force to crush by hand). Stir the biscuit crumbs, apricots and ginger into the toasted seeds.
3. Place the butter and condensed milk in a saucepan. Stir over low heat until butter has melted. Pour into dry ingredients and mix well to combine.
4. Press the mixture over the bottom of a lightly greased 30cm x 24cm sponge-roll tin. Cover and refrigerate for 1 hour before cutting into slices. Cover and store in the refrigerator.
